This is a vanilla sugar cookie recipe that is well tested in our home around Christmas.
Ingredients:
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt (skip the salt if you use salted butter)
- 1 cup unsalted butter (room temperature)
- 3/4 cup granulated sugar
- 1 egg (room temperature)
- 1 tsp vanilla extract
Instructions:
- Mix flour with baking powder and salt in a medium size bowl.
- Beat butter with sugar in a large bowl, using an electric mixer on medium-high, until fluffy.
- Beat in egg and vanilla till just combine.
- Add dry ingredients into the wet mixture in two parts. Mix just until combine.
- Divide dough in half; roll each portion into 2-inch wide log. Wrap in parchment paper and twist ends.
- Refrigerate for at least 1 hour.
- Preheat oven to 350F.
- Slice cookie log into 1/4 inch rounds and arrange 1 inch apart on un-greased baking sheets.
- Bake for 10-12 minutes until slightly golden.
